Histamine is a biogenic amine widely present in animal tissues and food, which is mainly produced by the decomposition of histidine in food during storage and transportation. Excessive histamine residues in food can cause allergic reactions, nausea, vomiting, headache and other uncomfortable symptoms, which pose a potential threat to human health. Therefore, it is very important to implement the detection of histamine residues in food such as aquatic products, meat and dairy products.
