Chymotrypsin ist eine Serin-Trypsin, die von der Bauchspeicheldrüse ausgeschieden wird und hauptsächlich für den Abbau von Proteinen während der Verdauung verwendet wird. Es hydrolysiert spezifisch Peptidbindungen von aromatischen Aminosäuren (wie Phenylalanin, Tryptophan und Tyrosin) in Proteinen, um kleinere Peptide oder Aminosäuren zur weiteren Aufnahme durch den Körper zu erzeugen. Darüber hinaus wird Chymotrypsin in der Proteinanalyse und -forschung im Labor, insbesondere für die Proteinsequenzierung und Strukturanalyse, широко eingesetzt.
