Acetaldehyd ist die wichtigste Aldehydverbindung in fermentierten Lebensmitteln wie Bier und Wein und hat einen stechenden Geruch. Gegenwärtig kann Acetaldehyd als Lebensmittelzusatzstoff in Joghurt, Saft, Süßigkeiten und alkoholischen Getränken verwendet werden, und es wird allgemein angenommen, dass die Acetaldehydaufnahme durch normalen Konsum im täglichen Leben keinen Krebs verursacht. Neuere Studien haben jedoch gezeigt, dass Acetaldehyd, das im menschlichen Körper über den Ethanolstoffwechselweg produziert wird, die Wahrscheinlichkeit menschlicher Krebserkrankungen erhöht.
Das Nachweisprinzip dieses Kits ist: Das Enzym katalysiert Acetaldehyd, um mit dem chromogenen Reagens eine orange-rote Substanz zu erzeugen. Die maximale Absorption der Substanz liegt bei 450 nm, und der Acetaldehydgehalt in der Probe kann durch Messung des OD-Werts bei 450 nm berechnet werden.
