Chitinase ist hauptsächlich in verschiedenen Krustentiergeweben, Mikroorganismen und Zellen vorhanden und nimmt an einer Vielzahl physiologischer Reaktionsprozesse teil. Chitinase kann Chitin effektiv abbauen und spielt somit eine sehr wichtige Rolle im Materialkreislauf der Natur. Das Nachweisprinzip dieses Kits: Chitinase kann Chitin hydrolysieren. Das Hydrolyseprodukt, das mit einer Base erhitzt wird, kann weiter mit dem chromogenen Reagenz reagieren. Die erzeugte chromogene Substanz hat eine maximale Absorption bei einer Wellenlänge von 585 nm.
