Tryptasen sind Serinproteasen, die bei Asthma eine Rolle spielen und in menschlichen Mastzellen stark exprimiert werden. Sie stammen von mindestens 4 nicht-allelischen Genen ab, die auf Chromosom 16p13.3 gruppiert sind: TPSAB1, das die Alpha- und Beta-I-Tryptase-Allele repräsentiert; TPSB2, das die Beta-II- und Beta-III-Tryptase-Allele repräsentiert; TPSG1; und TPSD1. Erhöhte Serum-Tryptase-Spiegel treten sowohl bei anaphylaktischen als auch bei anaphylaktoiden Reaktionen auf, aber ein negativer Test schließt eine Anaphylaxie nicht aus. Bei Nahrungsmittelallergien ist die Tryptase seltener erhöht als bei anderen Ursachen der Anaphylaxie.
