Chitinase kommt hauptsächlich in den Schalen von Krustentieren wie Garnelen und Krabben, Insekten, Organen von Weichtieren und Zellwänden von Pilzen vor. Chitinase kann die Hydrolyse von Chitin katalysieren und hat die Funktion, Pilzinfektionen zu widerstehen, weshalb sie zum Forschungsschwerpunkt bei der Bekämpfung von Pilzkrankheiten geworden ist.
Dieses Kit kann die Aktivität der Chitinase berechnen, indem es die Änderung des OD-Wertes bei 585 nm pro Zeiteinheit der Chitinase-katalysierten Chitinase-Hydrolyseprodukte misst.
