Lipoxygenase (LOX) ist in pflanzlichen Geweben, insbesondere in ölreichen Samen wie Sojabohnen, weit verbreitet. LOX katalysiert die Oxidation ungesättigter Fettsäuren, was zu einer Membranlipidperoxidation führt. Es spielt eine wichtige Rolle bei Pflanzenwachstum und -entwicklung, Reifung, Alterung und Stress.
LOX kann die Oxidation von Linolsäure katalysieren; das Oxidationsprodukt weist einen spezifischen Absorptionspeak bei 280 nm auf. Die Aktivität von LOX kann durch Messung der Änderung des Absorptionswertes bei 280 nm berechnet werden.
