Technical note
Laktose ist ein Disaccharid, das aus Galaktose und Glukose besteht und die primäre Kohlenhydratquelle während der Säugetierentwicklung darstellt.
Laktose wird durch Galactosidase zu Galaktose und Glukose katalysiert. Die Glukose wird durch andere Enzyme weiter umgewandelt, und das resultierende Produkt reagiert mit einem chromogenen Mittel zu einer farbigen Substanz mit maximaler Absorption bei 550 nm. Der Laktosegehalt in der Probe wird durch Messung des OD-Wertes bei 550 nm und Berechnung aus der Standardkurve bestimmt.
