Technical note
TBARS und TBA können unter hohen Temperaturen und sauren Bedingungen reagieren und dann eine rosafarbene Verbindung bilden, deren Konzentration linear mit der TBARS-Konzentration in der Probe zusammenhängt. Die TBARS-Konzentration kann durch Messung der Fluoreszenzwerte bei einer Anregungswellenlänge von 530 nm und einer Emissionswellenlänge von 550 nm berechnet werden.
