Phytinsäure ist die Hauptquelle für Inosit und gespeicherten Phosphor in Pflanzenkeimlingen und macht bis zu 90 % des gesamten Phosphors aus.
Das Nachweisprinzip dieses Kits: Enzyme können Phytinsäure zu anorganischem Phosphor und Inosit-Derivaten abbauen. Der erzeugte anorganische Phosphor reagiert mit dem Ammoniummolybdat-Farbstoff, und die Zunahme des OD-Werts bei 660 nm kann zur Berechnung des Phytinsäuregehalts verwendet werden.
