Fruktose ist die häufigste Hexketose, die oft in großen Mengen als freies Monosaccharid in Früchten und Honig vorkommt. Eine Vielzahl epidemiologischer Daten und experimenteller Studien hat gezeigt, dass eine übermäßige Fruktoseaufnahme ein wichtiger Faktor für die erhöhte Inzidenz metabolischer Erkrankungen sein kann.
Fruktose kann unter Enzymeinwirkung ein spezifisches Produkt bilden, das mit dem chromogenen Reagenz zu einer fluoreszierenden Substanz (Ex/Em: 530 nm/590 nm) reagiert.
