Lactulose (4-o-β-galactopyranosyl-D-fructofuranose), auch bekannt als Galactosidfructose, 4-β-D-Galactosid-D-Fructose und Lactulose, enthält ein Molekül Galactose und ein Molekül Fructose. Lactulose ist ein synthetisches Disaccharid, das durch Basenisomerisierung von Laktose entsteht, die während der Milcherhitzung durch freie Aminogruppen von Casein katalysiert wird.
Lactulose kann unter Einwirkung von Enzymen ein spezifisches Produkt erzeugen, das mit dem Chromogen reagiert und ein Fluoreszenzprodukt bildet. Die Anregungswellenlänge beträgt 530 nm und die Emissionswellenlänge 590 nm.
