AMY1A (amylase alpha 1A; salivary alpha-amylase) encodes a secreted glycoside hydrolase produced predominantly by salivary glands. The enzyme initiates oral starch and glycogen digestion and is studied in salivary enzyme biology, carbohydrate processing and amylase expression.

Biological function: Alpha-amylase 1A is a calcium-binding hydrolase that cleaves internal alpha-1,4-glucosidic bonds in starch, glycogen and related polysaccharides. This generates maltose, isomaltose, glucose and dextrin products and initiates carbohydrate digestion in the oral cavity.
