Alpha-amylase 1A is a calcium-binding hydrolase that cleaves internal alpha-1,4-glucosidic bonds in starch, glycogen and related polysaccharides. This generates maltose, isomaltose, glucose and dextrin products and initiates carbohydrate digestion in the oral cavity.
